On a rowing trip to Seville, Spain, I visited Osborne cellars in Jerez and was given a wonderful tour of their Celleros in their cellars and a tasting of their famous wines. I distinctly remember tasting the very old and luscious Pedro Ximenez (P.X.) Several years later I was presented with a rare parcel of very ripe and partially raisoned grapes suitable for making such a wine. I called it Lush because it is.

It will cellar but I honestly don't know if you should, or how it will develop with bottle age.
