80%, Cabernet, 12%, Merlot, 8% Petit Verdot
Alluvium derives its name from the soil types that it is grown on. Like the soils the wine is deep in colour, rich and complex. Cabernet provides the framework, Merlot the meat, Petit Verdot the muscle tone. Only the best barriques & best years are accepted into this flagship wine, hence in some years it is not made at all.
An interesting fact – when we bottled this wine, we put some under cork and some under screw top. The wine with screw tops has, to date, retained its freshness more so than the wine bottled with corks. |

This is a wonderful example of cool climate Cabernet at its best. Earthy and complex it oozes ripe blackberries and black cherry fruit. Developed cigar box character and vanillin oak mingle pleasantly with nuances of cloves and star anise. Elegant texture and oak integration.

This cool climate Shiraz is grown, at Boyntons, in deep and ancient river stone. It is also unirrigated. The 8% Viognier blend enhances the spiciness of the Shiraz and tends to round off the middle palate. A sensational example of a cool climate Shiraz/Viognier – smooth, round and long finish. The wine has great power and structure with abundant tannins.
Cellar up to ten years. This impressive wine would hold its own with a seared well-aged rib eye. |

The 2002 Shiraz is a great example of cool climate Shiraz at it’s aromatic best. An impressive nose, full of interest and packed with ripe fruit and spice. Lifted vanillin oak meets plum compote, cigar box and warm leather in an alluring blend of heady perfumes. The 8% Viognier lifts the intensity of the fruit flavours, adds its own spiciness which rounds off the richly textured and concentrated palate. The wine has great power and structure with abundant tannins. This impressive wine would hold its own with a seared well-aged rib eye

2002 PAIKO BOUDEAUX Cabernet Sauvignon & Petit Verdot |

The two principal varieties in this blend plus a little Merlot gives this wine, rich in blackcurrant, blackberry and dark plums, a touch of spiciness, almost clove like. The palate is fairly rich, smooth and complex with fine soft tannins.
The 2002 vintage reds were the first of our wines to have the Stelvin screw cap used instead of cork and this wine is the perfect example of how well red wines develop and age under this closure.
Because of the softness of this wine, it drinks well with a very wide range of foods from the backyard barbie to a camp over roasted leg of salt bush lamb. If you can’t find salt bush lamb or a camp oven, then try it with lamb rubbed and roasted with rosemary. |

Cabernet Sauvignon 55% Petit Verdot 45%
This blend of the classic Bordeaux varieties is a powerful, gusty wine with plenty of body and lovely complexity. Ripe blackberries, mulberries and cassis dominate the nose. The palate is generous and full, with toasty oak flavours and chewy, supple tannins. Makes great drinking now and should hold its structure well over the next 7 years. Will accompany boldly flavoured meat dishes such as venison or salt-bush lamb. |
